Learn why oats are a cornerstone of postpartum nutrition and how to prepare this healing, satisfying meal.

Oatmeal is a humble staple in postpartum kitchens, and can be anything but boring when made with intention. I’ve created many versions of nourishing oatmeal over the years, but this Sunshine Oatmeal recipe from my FREE Post-Birth Recovery Meal Plan has become a community favorite. Beyond its well-known ability to support lactation, oatmeal provides deep nourishment for postpartum recovery, helping new mothers regain energy, emotional balance, and strength. Warm, creamy, and comforting, this bowl truly feels like sunshine in a spoon.

About this Oatmeal Recipe

Why Sunshine Oatmeal? Because one spoonful feels like happiness and warmth from the inside out.

This recipe begins with a base of coconut milk, creating a rich, tropical foundation that deeply nourishes the postpartum body. A blend of cinnamon, cardamom, and nutmeg adds cozy warmth, grounding the senses and supporting healthy digestion.

But what truly makes this oatmeal shine is the fresh orange zest…a burst of brightness that lifts the spirit and awakens the palate. It’s literally sunshine in your mouth.

A handful of raisins and pecans add texture and natural sweetness, while a drizzle of maple syrup provides gentle sweetness with a low glycemic impact, especially when paired with protein like eggs.

7 ways this oatmeal help mothers recover from birth

In hospitals, new mothers often receive oatmeal on their breakfast trays—but this homemade version far surpasses in both flavor and nourishment. It’s a cornerstone of my Post-Birth Recovery Meal Plan, and here’s why:

  • Nutrient-Rich: Oats are packed with protein, vitamins, and minerals, especially zinc, manganese, and calcium. The B vitamins help increase energy, elevate mood, and fight exhaustion, anxiety, and postpartum stress.
  • Contains Iron: Helps replenish blood stores after birth
  • Fiber for Gentle Digestion: Rich in soluble fiber (beta-glucans), oats support regular digestion and help prevent constipation, a common postpartum concern.
  • Sustained Energy: The complex carbohydrates in oatmeal release energy slowly, helping mothers maintain stamina during long days (and nights) with a newborn.
  • Blood Sugar Balance: With a low glycemic index, oats help stabilize blood sugar levels. When paired with ghee and coconut milk, as in this recipe, they support nutrient absorption and long-lasting energy.
  • Hormonal and Emotional Balance: Oats naturally contain saponins and lignans, plant compounds that gently support hormonal balance. These nutrients can enhance mood stability and help mothers feel more grounded in the early weeks after birth. Additionally, coconut milk is known to uplift mood and support mental health.
  • Supports Mental Wellbeing: Coconut milk contains MCTs (medium-chain triglycerides) and antioxidents, known to help prevent anxiety and depression. Article here.

How Does Sunshine Oatmeal Support Lactation?

Oats are one of the best foods to support milk production after birth. They contain beta-glucan, a soluble fiber known to increase prolactin, the hormone that stimulates milk supply. The healthy fats in coconut milk and ghee also play an important role, helping the body absorb nutrients and soothe the nervous system, both essential for consistent milk flow. The healthy fats also make the breastmilk fattier for the baby! So, Sunshine Oatmeal is good for both the mother and the baby!

Notes and Tips

  • Use old fashioned rolled oat, not instant
  • Serve with a splash of milk of choice
  • If you want to get fancy, toast some coconut flakes and serve it on top
  • Be sure to add the vanilla after it’s done cooking to preserve the flavor
  • Don’t skimp on the ghee, it’s an easy way to sneak extra good calories into the mother’s diet.
  • Top with fruit such as fresh blueberries or bananas

Questions You May Have

What other milks can I use besides coconut milk?

Some of my clients prefer almond milk or cow milk. If you use cow milk, use half water and half milk.

How long will this oatmeal last in the fridge?

5 days in a sealed container

Can I freeze Sunshine Oatmeal?

YES! Make a double batch + freeze in 1 cup serving sizes for a healthy and easy postpartum breakfast.

What fats can I use besides ghee?

I LOVE ghee for postpartum mothers. It truly is a postpartum superfood. However, ghee can be expensive and hard to find. My next go-to for this recipe would be coconut oil.

What other sweeteners can I use?

Honey or brown sugar is fine. I prefer the flavor of pure maple syrup though.
